Trivento Amado Sur Malbec Blend 2015

Thank goodness that the days are finally getting just a little bit longer! But Winter still has us firmly in its grasp. As a result we’re spending a lot more time hanging out at the house cooking and playing and just generally being casual. This week we have a delicious Malbec based blend that is absolutely perfect for all of those times when you just feel like having a great glass of Red. The nose is nice and dark with hints of chocolate truffles, stewed plums, wood smoke, and a kiss of mint. Have a quick sip and you’ll see that the palate does a fine job of fulfilling the promise of the nose as it delivers impressive layers of fresh blackberries, cassis liqueur, and blueberry pie filling. As the wine chugs along to the finish you’ll notice a pop of cherry jam and a kiss of lingering tannin that serves to keep it feeling structured enough to be food friendly but juicy enough to sip casually on its own too. All in all, this is a great bottle of Red and a solid everyday value that should continue to drink very well over the next 12 months or so. Food Pairing:
One of my favorite wintertime side dishes starts with lightly steamed cubes of butternut squash. Once the squash is just beginning to soften I like to pull them from the steamer and add them to a big cast iron skillet with fresh rendered lard, diced apples, and diced mushrooms. With the heat up nice and high, I let them begin to brown in the fat before tossing everything with some garam masala and a pinch of salt. Sometimes at the end of the process I add a splash of homemade chicken stock, sometimes a splash of red wine, and other times I leave them dry. But I always add a handful of chopped pecans or walnuts just at the end to provide some textural contrast to the other ingredients. I think you’d be all sorts of happy with the way the 2015 Amado Sur pairs up with the bold, spicy flavors of that dish.
