If you’re a fan of big rich Cab’s then you’re going to be in heaven this week when you try out the Pascual Toso Reserve Cabernet! This Argentine gem delivers big style and interest at a price that is too low to pass up. A brooding nose of blackberry, cocoa, and toasty oak starts things off then a hearty palate replete with robust notes of macerated black cherries and crushed plums. The finish is long and plush with a kiss of sweet tannin and a surprising amount of crushed graphite, black tea, and warm berry preserves. Cabernet comes in lots of styles from lots of places and this week’s offering is clearly built with hedonistic pleasure in mind. If you like a good hearty cocktail then you’ll love this one all by itself. But you can pair it up with a classic plate of grilled flank steak and chimichurri sauce for a real Argentine style treat! Please stop by the shop tonight to taste this delicious red for free. Don’t delay though because we bought every bottle we could get our hands on and yet there still won’t be enough to last through the weekend.
On to the Tasting Notes:
In what has become the classic Argentine winemaking tradition this week’s “Wine of the Week”, the 2011 Pascual Toso Reserve Cabernet, is plump and dense. In some ways it stands as an affront to the traditional style of Cabernet from more established regions like Bordeaux and Napa. But in other senses it is true to it’s own heritage and, as a result, deserves to be judged on its own merits. To be perfectly honest, I prefer the classic style of Cabernet that is lean, somewhat tannic, and dominated by red fruit and fresh herbs. But I totally understand why this newer style has become so popular. Heck, drinking wine should be a pleasurable experience. That’s what it’s all about, isn’t it? And I can tell you without equivocating that drinking the 2011 Pascual Toso Reserve Cabernet is thoroughly pleasurable. A bit of decanting opens this buxom beauty right up. The nose bursts with rose, crushed berries, incense, and vanilla. The entry is creamy and generous with no hard edges to get in the way of the abundant black plum, creamy red cherries, and blackberry jam that it offers up. It finishes with just a little tannin and nice soft acidity which serves to reinforce the notion that is was built in a hedonistic and fruit driven style. Oak aging adds wonderful weight and texture to the palate and gives the wine a touch more structure as well. Overall I think you will that this Cabernet is a good fit for a variety of situations from Tuesday evening cocktails right on through to fancy Saturday night steak dinners. At ten bucks off the regular price it’s just too darned good not to buy a few bottles!
Food Pairing:
I think you will totally love the way that this luscious Cabernet offers a counterpoint to the vibrant, somewhat spicy flavors of the classic Argentine condiment, chimichurri. That said, the Hatch green chilis are just coming into season so I suggest trying out something a little different this week. Grab some fresh corn and roast it on the grill until it begins to blacken a little. Then cut it off the cob and saute it in bacon fat with some freshly diced yellow onions, garlic, fire roasted and diced green chilis, and a very small dab of tomato paste. Once it has all sauteed for a couple of minutes then loosen things up with a splash of dry white wine. Use that as a condiment on top of a grilled thick cut bone-in pork chop and finish the plate by sprinkling crumbled bacon over the top along with some shaved Parmigiano Reggiano. I think you’ll be blown away by the way that this Cab works with that spicy earthy heat that you get from the chilis and the smoky notes you get from the bacon and grilled corn.
