This dog gone 2017 Substance Cabernet is hard not to like! The nose is deeply perfumed with attention grabbing top notes of rose petals and blueberry blossoms that slowly give way to darker hints of graham cracker pie crust, baking chocolate, and cold espresso. On the palate you’ll get a surprisingly sincere representation of Cabernet Sauvignon with medium body, a core of firm tannins, and plenty of sweet cherry, strawberry puree, and kirsch liqueur. The finish is long and precise with that fine grained tannin neatly interwoven among long lingering layers of grilled thyme, black forest cake, and sun-baked earth. The style is appealing for its sincerity. You’ll find no residual sugar here. Neither will you find that sappy, mouth-coating viscosity that is all too often present in those over-oaked Napa Cabernets. It is a uniquely Washington effort that will provide excellent drinking now and for another three or four years as it gently matures in bottle. Food Pairing:
I think this style of Cabernet was created with food pairing in mind. One pairing that comes to mind as being particularly appropriate is my favorite stuffed acorn squash recipe that involves stuffing a roasted halved acorn squash with a mix of sauteed breakfast sausage, mirepoix, mushrooms, dried cherries, and walnuts then topping it with crumbled blue cheese before finishing it in a hot oven and drizzling it in really good balsamic vinegar just before service. Gosh that sounds good when I read it. I’m really hungry now. Cheers!
